Scientists from BioNutrients, a sustainable food technology company in Singapore, have created vegan cheese that tastes like real cheese.
According to the company, the cheese that the scientists created is made of algae, tastes as refreshing as cheddar cheese, and is full of healthy B vitamins.
And the website "Daily Mail" quoted the researchers as saying: "It can be sliced for a cheese board, melted in toast, added to a sandwich, or sliced on top of crackers or bread as a rich and sticky layer."
Earlier this year, the company announced the production of the protein-rich, dairy-free algae milk from which this new cheese is made.
"Microalgae is one of the most nutrient-rich resources on the planet," said Eugene Wang, co-founder and CEO of the company.
“Today we have shown yet another aspect of the limitless possibilities this plant can offer, which is a dairy-free, lactose-free alternative to cheese, which provides a higher protein content than most available dairy-free alternatives.”
Microalgae is already used as a food supplement and aqua feed for fish, and is an excellent source of amino acids, fatty acids, vitamins, minerals and antioxidants.
One ounce serving of microalgae cheese provides twice the amount of vitamin B12 found in animal cheese.
"Vegan and dairy-free options for cheese are on the rise in response to growing consumer demands for vegan alternatives," the company said.
According to the company, it intends to make a "yogurt" that is also made from algae milk, as well as a protein flour that can be used to make vegetable "meat", cakes and other baked goods.
According to statistics from the international market research company "Research and Markets", the global vegan cheese market was valued at $1.2 billion in 2019 and is expected to reach $4.42 billion by 2027.
